What better way to use up all those delicious, farm-fresh tomatoes? With its buttery crust, mayonnaise-buttermilk-Parmesan custard, and loads of tomatoes, it’s the perfect pie for the season. Serve this tart as a first course, or for lunch or dinner with some dressed greens alongside.

In the absence of a food processor, feel free to make the crust using whatever method you usually use for pie pastry: pastry blender, stand mixer, or your hands. 

If you're tight on time, you can also use a pre-made crust.
