2022 Syrup Season Starts

The 2022 maple syrup season started on February 23rd. We tapped around 30 sugar maple trees around the farm and gathered their sap over the next week. Five-gallon buckets are transferred into our new storage tank located in our refrigerated trailer. We fired up our new evaporator and began boiling last Sunday. We took a break after twelve hours and started up again on Monday. Later that night, we pulled four gallons out, filtered it, and transferred it into a propane-fired turkey-fryer. Finally, we heat the syrup to 219° (7°above water boiling). We filtered it again and bottled 65 8oz 1808 labeled bottles. We'll do the same routine this weekend. Sap collection is dependent on the weather, so we'll need to see how much more we can collect before we shut the operation down for the year. Hopefully, we'll make two-three times as much as last year in half the time. So our new equipment is already paying for itself. PLUS members will find a bottle in their first basket of the season.
