Sweet! Carrots in February

Carrots are one of our most favorite things to grow and eat around the garden. Fall carrots, in particular, are a special treat. We planted a late crop and crossed our fingers. To our delight, we’ve been pulling small, but super sweet, carrots all Winter. Carrots use sugar as a defense mechanism against the cold and we’re glad they do. Read about the science here.
