Simple Pesto

There is nothing that says summer like homemade pesto. Fresh and bright, pesto is also incredibly easy to make. Just clean and de-stem the fresh basil from your weekly box and throw it in a food processor with nuts and garlic. Add some 1808 Olive Oil and you have a versatile sauce for everything from pasta and chicken to vegetables and fish.

Instructions

  1. Combine basil leaves, pine nuts or walnuts and garlic (or garlic scapes!) in a food processor and process until very finely minced. With the machine running slowly dribble in the oil and process until the mixture is smooth. Add the cheese and process very briefly, just long enough to combine. Store in refrigerator or freezer.
