We love green beans. But even the best lovers need a break from time to time. Blanch it! That’s right, blanching is fast and easy and lets you enjoy green beans later when you are again longing for the slenderest of vegetables. Clean your beans, boil for 2 minutes (as these beans are on the super-model side of skinny) and then dump in ice water for a few more minutes. Promptly divide into side-dish-size freezer bags and pop into your icebox. Now you’ll have fresh-tasting green beans any time of the year.
